Slow poached chicken stuffed with tarragon mousse, dauphinoise potato, green beans, wilted chard, roasted beetroot, finished with white tarragon sauce
Pan fried salmon fillet with a spring onion and chive potato salad, purple sprouting broccoli, roasted cherry tomatoes finished a lemon beurre blanc
